A sloppy joe casserole recipe topped with biscuits that is Weight Watchers friendly and is bursting with flavor.

Biscuit: After making this casserole for the very first time, I was pleasantly surprised to hear my husband say, “I love this!”. Not that I didn’t expect for it to be good – it’s just that he isn’t usually quite so enthusiastic with his food opinions.

Believe me – you don’t need to be trying to lose weight to enjoy this recipe. It’s so flavor filled that everyone will enjoy it and it doesn’t taste like a low calorie/low fat/low carb recipe at all.

My husband and I are following the Weight Watchers Purple plan and were pleased to find a recipe that allowed us to have such a generous portion of food for only 3 points!

In fact, we actually eat 2 servings each because the points are so low and it fills our tummies so nicely. Yay for not feeling hungry after finishing a meal – right???

Step 1: Start by preheating your oven to 375° Fahrenheit.

Step 2: Coat a skillet with non stick cooking spray. Add the ground turkey to the skillet and cook until almost completely done.

Step 3: Add the chopped vegetables to the meat and continue cooking until the vegetables are soft.

Ste 4: Stir in all of the dried seasonings, except for the basil, and mix well.

Step 5: Add the crushed tomatoes, ketchup and Dijon mustard. Mix, reduce heat and simmer until the tomato juice has cooked down.

Step 6: Remove from the heat. Mix in the corn, basil and shredded cheese. Add mixture to a rectangular baking dish.

Step 7: Prepare dough as listed in the recipe directions, cut into 8 equal pieces and place atop the meat mixture in the casserole dish. Add an egg wash and sprinkle with Everything seasoning.

Step 8: Bake at 375° for 20 – 25 minutes or until the biscuit topping is lightly browned.

  • Be sure to use a large skillet.
  • Break the turkey into small chunks as it cooks.
  • Chop the vegetables in small pieces.
  • The dough is sticky, so be sure that the surface for rolling the dough is generously floured and that you flour your rolling pin.
  • My photos show me cutting the dough with a biscuit cutter, but in reality I think it would be better to simply cut the dough into equally sized pieces.
  • The baking dish that I used measures 10 x 12 x 2.

An added bonus is that any leftovers heat well in the microwave, although you may want to remove the biscuit topping before microwaving to prevent it from becoming chewy.

For a fun spin, bake the casserole in individual baking dishes! Just be sure to keep an eye on the biscuit topping so that it doesn’t overcook.

A hearty and delicious low calorie, low fat, low carb recipe for a Weight Watchers friendly sloppy joe casserole topped with biscuits.

  • 6 sprays Non Stick Cooking Spray
  • 1 lb 98% Fat Free Ground Turkey
  • 3/4 cup Chopped Onion
  • 3/4 cup Chopped Celery
  • 3/4 cup Chopped Green Pepper
  • 1 tblsp Chili Powder
  • 1/2 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1/8 tsp Cayenne Pepper
  • 28 oz Crushed Tomatoes
  • 1/4 cup Sugar Free Ketchup
  • 1 tblsp Dijon Mustard
  • 2 tsp Dried Basil
  • 1 cup Frozen Corn Kernels
  • 2/3 cup Fat Free Shredded Mozzarella Cheese
  • 1 cup No Fat Plain Greek Yogurt
  • 1 cup Self Rising Flour
  • 1 Egg
  • 2 tsp Everything Seasoning
  • Add ground turkey to large skillet sprayed with non stick cooking spray. Cook until almost completely done, breaking into small pieces as it cooks.
  • Add chopped vegetables to turkey and continue cooking until vegetables are soft.
  • Add chili powder, salt, black pepper and cayenne to turkey and vegetable mixture. Mix well.
  • Reduce heat and add crushed tomatoes, ketchup and Dijon mustard. Stir well. Simmer 15 minutes or until tomato liquid is reduced.
  • After tomato juice has reduced, add corn, cheese and basil. Mix well and remove from heat.
  • Add mixture to a rectangular baking dish sprayed with non stick cooking spray.
  • Prepare biscuit dough by adding yogurt and flour to a medium size bowl. Combine ingredients well. Dough will be sticky.
  • Turn dough out onto a generously floured surface, including any loose flour that didn’t get mixed into the dough. Roll/spread out to about 1/4″ thick and cut into 8 equally sized pieces.
  • Using floured fingers, add cut pieces to top of meat mixture in the baking dish. Brush with beaten egg and sprinkle with Everything seasoning.
  • Bake at 375° Fahrenheit for 20 – 25 minutes or until biscuit topping is lightly browned on top.
Based on the brands that I used, I estimate each serving to be 2 points on the Weight Watchers Purple plan.
